পাহাড়ে চাষের পদ্ধতিকে বা প্রক্রিয়া কেই আমরা সাধারণতঃ জুম চাষ বলে থাকি । এই পদ্ধতিতে প্রথমে পাহাড়ী ঢালের ঝোপঝাড় কেটে ফেলে রাখা হয় । কাটা ঝোপ-ঝাড় চৈত্র-বৈশাখ মাসের গরমে শুকিয়ে গেলে আগুন দিয়ে পুড়িয়ে ফেলা হয় । এরপর একটু বৃষ্টিতে জমি নরম হয়ে গেলে তাতে ছোট ছোট গর্ত করে ফসলের বীজ বপন করা হয় ।
